Summer Camping


This past July I had the wonderful opportunity to go camping with some friends in the gorgeous American Fork Canyon.  We got to the campsite right as the sun was setting and started working on our deluxe tin foil dinners.  They.  Were.  Delicious!



Then, of course, we busted out all the s'more fixins and pounded back tons o sugar.

Gluten free snicker doodles, cherry cotton candy, roasted marshmallow s'more.




This was amazing.  It's a roasted marshmallow wrapped in cotton candy.  New campfire favorite.


Then we all headed to our tents for a good nights nap after all of our snacking.  I am so sad I didn't get a picture of the glorious tent and bed laura let me share with her.  It was an 8 man tent filled with space heaters and a queen sized blow up mattress.  Our bed was made up with layers upon layers of sheets, quilts and blankets topped with our unzipped sleeping bags as more blankets.  Laura had also placed hand and feet warmers under the blankets a few hours before so our sheets were heated when we tucked ourselves in!!!  This girl thinks of everything!  It was the best nights sleep I have ever had camping, I might even say it was more comfortable then my bed at home.  It was that amazing.



The next morning we woke up and laura made us the most delicious breakfast cassarole in the dutch oven.  It was divine.  Then we spent the day relaxing, reading magazines, chit chatting, snuggling the doggies and enjoying the peaceful quiet of the outdoors.  It was splendid.







It was a beautiful day to be up in the mountains!  We were planning on staying a few more nights but sadly our trip had to get cut short because of some crazy unforeseen circumstances.  I was hoping to get more pictures of the group and our amazing campsite over the next few days... but I'm glad we got to have our own fun night and day.  Thank you Angie and Laura for all of your amazing preparations to make our camping adventure so much fun!  I sure do love you guys!


An Epic Country Weekend


This past July Lex, Lu and I had an epic weekend full of country concerts.  On Friday, we headed up to deer valley to see Dierks Bently!  This was my first time seeing him in concert!  It was the most beautiful night for a concert in their stunning amphitheater.



Laura and Alexis had got us all these matching American flag scarves.  During one of his closing songs we were waving them in the air and Dierks commented on and sang about them!  We were famous for a couple of seconds, it was thrilling.





At the end of the show, Dierks gave away his lead guitarists guitar to a little girl on the front row.  Oh what I would have given to have been in that little girls shoes!



That night we stayed in a hotel in park city.  The next morning we relaxed a bit before heading home to get dolled up for concert number two, Kip Moore and Tim Mcgraw!!!!


We got to USANA nice and early to make sure we got a good spot in GA.  We were able to get right up next to the runway!!! by far the closest I have ever been to the stage in my concert going career.



Kip was the second opening act, he made us all swoon with his power ballads and deep raspy voice, and cut off tank.







We had a little time to regroup before our main man took the stage.



That glowing personage in the background is Tim making is entrance on stage!



Tim is just the best.  He adores his fans and got right up close to us multiple times.  Tim and I held hands a couple of times, NBD.






Tim is one classy cowboy and I can not wait to see him in concert again, let us hope that it is next summer.  Country concerts are quickly becoming one of my new favorite summer traditions.  Once again, many thanks to Alexis and Laura for opening my eyes to these adorable country singers, they have become major game changers.

Hiking Mount Olympus

While the Burton's were in town, Karin and her two oldest boys wanted to do a big hike, Andrew and John chose Mt. Olympus.  Dad and I decided to join them on their  adventure.




We got a pretty early start.  The day was cool and super over cast, we couldn't see the top of the mountain for most of the hike.  We were wondering if we would even have a view when we reached the top!  The cool weather made the hike rather enjoyable!






As we climbed higher we entered into the cloud cover.  We were enveloped in wispy clouds, it was a pretty neat experience!




It seemed like it took us years to reach the saddle! I have hiked this mountain before, but for some reason this time it seemed like it was so much longer.. and harder ..  When we finally reached the saddle we stopped for a little rest and to have a picnic lunch.  Then we started the daunting task of bouldering to the very top of the mountain.





When we reached the top we had a couple of minutes of the spectacular view, then it was covered up with clouds.  Andrew and John are hiking all stars!  They beat everyone to the top!

On our way down, the cloud cover burned off and was replaced by sunshine and beautiful blue sky!  We got our awesome views after all!




We celebrated our conquering of Mount Olympus with deliciously cold and refreshing slurpees!
I always love enjoying the beautiful outdoors, especially with my family!
